Once the handle # is re-assigned, the owner of a domain depends on the server you ask. I think, the best thing is to restore the deleted records from RIPE backups and to remove the referer to the DeNic-whois-server until either the DeNic is paying or is running a workable service (maybe with references to the RIPE-whois-server for persons).
